The grapes were specifically selected from the best performing vineyard parcels sourced from the Stellenbosch wards of Helderberg, Simonsberg, and Jonkershoek Valley. The vineyard blocks were micro-vinified separately until final blending. Fermentation in open-top concrete fermenters, manual plunging to ensure optimal colour extraction, extended maceration to increase age-ability, and the use of high-quality French oak (75% new) ensure the pedigree of this distinguished wine. After a year in barrel, the individual batches were blended to form the final wine and returned to barrel for another year before being bottled unfined and unfiltered. The wine matured in bottle for another year before release.

Once harvested, the grapes are bunch sorted and pumped into open-top fermenters. Here, Christo and the winemaking team vinify each vineyard block separately, allowing the unique characteristics and flavours of each block to develop. After a year of ageing, the final blend is made, and the wine spends a further year in oak before release. The result is a Cabernet Sauvignon that brims with complexity thanks to the blended fruit from diverse terroir.

Deep garnet in colour. Inviting aromas of blackberry, cherry and fresh plums with hints of spearmint and cassis. The palate shows sweet fruit on entry followed by a delicious red and black fruit pastilles complexity. Firm tannins and balanced acidity assist in creating an appetising mid-bodied mouthfeel. A long and lingering finish is complemented with hints of plum, black cherry and cedar. A classic Stellenbosch Cabernet Sauvignon.

Description

Reserve status is only endowed if the grapes and resulting wine measure up to exceptional standards. Hand-selected grapes from older, lower-yielding vines are used. Fermentation is done with a selected yeast strain under controlled temperatures. Manual plunging during this period ensures optimal colour extraction. After five days the tanks are closed and allowed to macerate for a further period, normally 10-14 days.

Pressing follows and the wine is transferred to barrel for the secondary fermentation. On completion, a final quality check and analysis are performed and the Reserve is then prepared for barrel ageing. Bottling is followed by hand labelling and further bottle maturation.

At the appropriate stage, Etienne, Christo and Yvonne taste and blend together as a team. The final blend matures with a generous amount of new oak barrels for up to two years, with further ageing in bottle before release. ‘Reserve’ status is exclusively endowed if the grapes and resulting wine measure up to an exceptional standard, resulting in a wine of limited quantities and available on an allocation basis only.
