The grapes are fermented in open top fermenters and punched down manually 3 times per day to optimize extraction. Matured for 18 months in barrels of which 20% are new to ensure the preservation of the fruit whilst the fruit and oak tannins are stitched together into a seamless wine. The wine was bottled on the 20th of November 2023.
The colour is deep and opaque. The nose is expressive with a complex array of berry fruits and savoury notes. The combination of black and red currants brings the wine to life with dark chocolate, cedar and fynbos aromas complement the fruit. The elegant palate shows the pepper spice with the mulberry and cherry fruits and finishes dry with a touch of juiciness. A full-bodied wine with complex layers of fruit, juicy tannin and a dry finish. As the maiden vintage, this wine is showing tight, dry tannin at this youthful stage and I am curious to see how the wine evolves with maturation.
