Pieter’s love affair with MCC style sparkling wines started early on in his winemaking career. The bubbly bug bit hard and wouldn’t let go as his innate admiration for the universal charm of this challenging style of wine took hold. He credits his microbiology and plant science background with helping him to understand and appreciate the finer nuances of crafting Cap Classique. Numerous vintages in Champagne France and other top wine producing regions across the globe have provided plenty of opportunities for Pieter to hone his natural affinity for this specialized and exacting craft.
VINEYARDS & SOILS
30% Cape Agulhas, 30% Darling, 22% Robertson and 18% Napier.
The Chardonnay grapes for this Blanc de Blancs were selected from a diversity of terroirs to harness a multitude of flavour and structural profiles in the crafting of this Cap Classique wine. The fruit from the cool climate regions of Cape Agulhas on the Cape South Coast and Darling on the West Coast is complemented by Chardonnay from the limestone-rich soils of Robertson, allowing for grapes from three distinct appellations to come together in creating a multi-layered wine of singular excellence.

NAPIER (40%) – Cape Agulhas Triangle
Strong maritime influence ensures long, slow ripening, delivering vibrant natural acidity and intense flavour purity.
DARLING (33%)
Cool-climate vineyards contribute linear acidity, citrus drive and aromatic precision.
ROBERTSON (27%)
Limestone-rich soils provide structural integrity, textural depth and characteristic saline, seaweed nuances.
Together, these sites form a complex, mineral-driven expression of Chardonnay with clarity and finesse.
VINIFICATION:
HARVEST: Hand-selected and hand-picked in the early morning to preserve freshness.
PRESSING: Whole-bunch pressed; only the cuvée fraction used.
Fermentation: Predominantly in stainless steel and ceramic vessels for freshness and purity, with a small portion fermented in traditional French oak barrels (Pièce Champenoise) to enhance texture and complexity.
BLEND SELECTION: Individual parcels assessed after three months on light lees through rigorous tastings.
SECONDARY FERMENTATION: Traditional bottle fermentation. 55 months of lees contact for autolytic development.
DISGORGEMENT: Post-remuage disgorgement, followed by up to six months of cork maturation prior to release.
