17% of the Chardonnay is from the 2022 vintage and was fermented in 600l 4th-fill Stockinger barrels from Austria. The remaining Chardonnay component from the 2023 vintage was fermented in cement tanks. The Pinot Noir was was whole bunch pressed to ensure a gentle extraction. After settling, the free run juice was fermented in stainless steel.
The wine was on lees for 19 months (7 months more than minimum for Cap Classique) giving lovely texture and a fine bubble.
Jane’s tasting notes: “Pale salmon in colour. Nose full of bright citrus, intense raspberry, rose petal and a hint of spice. The palate is tangy and vibrant with a fine mousse and a refreshing, dry finish.”

The project originally started in 2009 when Naas and Jenny Ferreira made a bubbly from a small vineyard planted at Klein Optenhorst, their beautiful home in Wellington. The wine was then named after the property.
After 29 years, they decided to sell the farm and move to Montagu and their youngest daughter Jane Ferreira-Eedes resolved to continue producing the wine as it holds many memories of special occasions at the family home. The name now changed to Dainty Bess, one of Jenny’s favourite rose types.
A visit to the Ferreira family home makes it clear that Jenny has a deep love and understanding for gardening. So we happen to think this is a very suitable new name for an elegant and fragrant pink bubbly.
