Situated at the foot of the Helderberg Mountain, the Taaibosch estate is afforded panoramic views stretching to Cape Point, Table Mountain, and the Stellenbosch Hills.

At an altitude of 400 meters above sea level and a South West facing direction, these vineyards benefit not only from great positioning but also the desired cooling wind that optimises ripening during the summer months.

The Crescendo is a true reflection of the terroir from which its grapes originate, and it is particularly characteristic of wine made in the historic region of Stellenbosch.

Description

 

Many of us, who have been drinking wine for longer than the last decade, will remember the iconic Cordoba Crescendo of the ’90s, crafted by Christopher Keet. It was the only blend of Bordeaux varieties in South Africa at the time that featured Cabernet Franc in the leading role. The elegance in the wine lured one in from a young age, but it’s the age worthiness that rewarded those who kept a few bottles tucked away in their cellars.

The farm has changed hands a few times in the last decade, but under the guidance of Schalk-Willem Joubert, this Cabernet Franc blend is showing us that this special Helderberg site has more to share.

All grapes on the estate are hand-picked. Once received in the cellar, the grapes are gently transferred by means of gravity to both stainless steel and cement vessels for fermentation. A period of cold soaking follows, which enables rich extraction of colour, elegant aromas and bright flavour. Extended maceration follows at the conclusion of fermentation, which assists in providing the wine with soft texture, increased colour intensity and complexity.
