Solo Wines Cabernet Sauvignon 2023

R890.00

Mid-slopes with shallow, well-drained iron laterite (“koffieklip”) soils underlaid by fine clay – a hallmark of the ward. Pea-sized, thick-skinned berries of remarkable concentration, shaped by the marginal soils and slope position. Picked on taste in mid-March 2023, ensuring optimal ripeness and balance.

Grapes are mechanically sorted, destemmed, and lightly crushed. Thereafter cold soaked for three days to enhance colour and aromatic extraction. Manual punch downs and pump-overs ensure balanced tannin and flavour development followed by 20 days on the skin for depth and structure. The wine is then transferred to 225L, 100% French oak barrels, 50% new, 30% second-fill, and the balance third-fill, for 19 months.

Powerful yet refined, with intensity from thick-skinned berries and layered complexity from extended oak maturation. Drink from 3 to 15 years after vintage.

Description

Carl Schultz graduated as dux student from Elsenburg Agricultural College and began his career at Simonsig Estate under the mentorship of Johan Malan, one of South Africa’s most respected winemakers. He later joined Hartenberg Estate, where he would spend the next 32 years as Cellarmaster and, from 1996, Production Director – helping guide the estate to international recognition for its wines.

Over the course of his career, Carl has worked internationally, including time in the Northern Rhône, and has travelled widely to broaden his understanding of viticulture and oenology. In 1997 he was invited to join the prestigious Cape Winemakers Guild, becoming its sixteenth member, and later served as chairman.

Carl has also been nominated for induction into the Ordre des Coteaux de Champagne – South Africa Chapter, an international order recognising individuals who have contributed significantly to the appreciation and culture of fine wine. This honour formally recognises him as an Equerry (Sire) of the Order of Champagne Ambassadors, part of a global community with embassies in seventeen countries.

Throughout his career, Carl’s philosophy has been shaped by influential mentors, strong teamwork, and the belief that great wines are the result of doing many small things consistently well.

After 36 years in the wine industry, Carl established Solo Wines by Carl Schultz in 2025 – a bespoke, independent venture, focused on artistic freedom, vineyard expression, and uncompromising quality.
