The Sauvignon Blanc grapes were hand-picked, hand-sorted, whole-bunch pressed, settled and fermented in large, older French oak barrels and stainless steel, using wild yeast only. Ten percent of the wine is made up from Lightning 2020 which spent 18 months on lees in barrel.

This is an elegant, layered Sauvignon Blanc, reminiscent of a dry white Bordeaux. A sophisticated, rich wine with layers of green apples, preserved lemons, tropical pineapple, straw and minerality, herbal notes and a hint of creamy vanilla.

Description

Lighting was the Kruger National Park’s most famous painted wolf. The alpha male of the Skukuza Pack, with his signature lightning flash on his left side he was easily identifiable and beloved by researchers as the quintessential African Wild Dog.

The Sauvignon Blanc grapes came from the beautiful Vaalvlei and Stonefields vineyards in Stanford, which are close to the ocean and have decomposed granite soil.
