The second vintage from Jolandie Fouche is probably going to sell out even faster than the maiden 2018.
What’s in the name? Jolandie’s husband, Gustav, send her this quote a long time ago:
“some days I am more wolf than woman, and I am still learning how to stop apologising for my wild”
So when the new wine needed a name, this came to mind again.
From the start the intention was to make a lighter style Pinotage. To ensure a good acidity, Jolandie chose grapes from a 46 year old vineyard on granite soils. She also picked a bit earlier and worked very gently with the wine. After fermentation the wine was racked to old 300lt barrels and after 10 months aging it was bottled at a alcohol of 12%. Only 680 bottles were produced.
