There are many parallels that can be drawn between women and wolves. Loyal, protective, wild and beautiful, both know the unknowable and sense the unseen.
This Chenin Blanc is a blend of grapes from three different vineyards. Two thereof are located in the Paardeberg region, situated in granitic soil, and was planted in 1971 and 1980 respectively. The third vineyard is situated north of the town of Malmesbury in red iron-rich soils and was planted in 1981. All of the vineyards consist exclusively of dryland bush vines.
The granite components are linear and mineral within the white fruit spectrum, adding freshness. The iron-derived influences impart beautiful yellow-spectrum aromatics which adds richness and texture. The final blend features equal contributions from all three vineyards.
All of the grapes were picked early in the morning, packed in crates and allowed to spend 24 hours in a cold room. The following day the grapes were whole bunch pressed, and the juices left to settle overnight.
After 24 hours the juice was transferred to a combination of 300L and 500L old oak barrels. Natural fermentation was allowed to occur, and the wine matured for 10 months on the lees before bottling.
2600 bottles were produced.
