This happens to be a Sauvignon Blanc, but it’s quite simply a delicious white wine. Let your pre-conceived ideas about this grape fly out the window and allow yourself to enjoy this enthusiastic and experimental approach to some people’s least favourite variety.
The original idea was to “recreate” a Cabernet Sauvignon by blending the two parental grapes Sauvignon Blanc and Cabernet Franc; vinified separately and after a few attempts at marrying the juice Craig quickly decided to let go of the idea as it ended up tasting more like a “Franc Blanc” than Cabernet Sauvignon.
The Sauvignon Blanc grapes underwent 100% Carbonic Maceration for 5 weeks and spent 16 months on the lees. Hailing from loamy shale soils this wine shows some flint, lemon curd, lime and loads of texture. Only 2100 bottles produced.
