Pet-Nat, short for “Petillant Natural” or often referred to as Methode Ancestrale is the oldest way of making Sparkling Wine. With only one fermentation as opposed to a second inoculated alcoholic fermentation, the wine is bottled whilst the must is busy fermenting with active yeast cells and residual sugar. Seeing that the carbonic dioxide can’t escape the bottle it becomes integrated in the wine. After sufficient time in bottle, the dead yeast cells are discarded through a process of disgorgement and the wine is topped up without any additives.
100% Chenin Blanc from the Hemel-en Aarde, this wine is vibrantly fresh. Think peach blossom and golden delicious apple notes with just a touch of residual sugar that will convert any Prosecco lovers.
A fantastic wine to pair with a whole range of dishes: an antipasti platter, mains of carbonara pasta, grilled fish or chicken, and a range of salads. But actually it is the ideal aperitif and conversation starter.
