B Vintners Method Ancestral

R175.00

The magic is in the way you open and serve this wine.

The bubbles are alive in there. Make sure you chill the wine properly to be very cold. Lift the cap only a touch to allow some gas to escape slowly before you open it completely. Don’t be too quick with this and Do Not shake the bottle. You will end with a soda stream and lose half a glass and possibly get a wild stare from your friends. Show how cool you are and take it slow and steady.

Description

Gavin Bruwer has been experimenting with Pinotage in making this Method Ancestral or as we say for short, PetNat style bubbly.

Pet Nat is an abbreviation for Petilant Naturel.

This wine is a collaboration between B Vintners and Danie Carinus. Danie is known as one of the best grape growers in Polkadraai on the farm Blue Gum Grove. Here some of the best grapes, used by independent winemakers, are cared for meticulously. Danie planted a Pinotage vineyard for B Vintners, and instead of dropping the bunches, or selling the grapes from the young vineyard to somebody else while it’s not deemed ready for the B Vintners Liberte Pinotage yet, Gavin decided to make this sparkling wine.

Pinotage is an early ripening variety, and when you decide to pick the grapes super early for this low alcohol bubbly, then you must be ready to harvest early in January.

Fermentation lasts for about 3 months, before bottling on the lease after gross filtering. The result is a wine that looks almost like cloudy apple juice with obvious sediment in each bottle.

Should you purchase and open a bottle now, you can expect upfront fruit cocktail and lemon curd flavours. A touch of plum tart even comes through. But as the wine spends all its time on this sediment and lease in the bottle, a bottle purchased 6 months from now would give very different flavours. Probably more nutty and savoury notes will develop.

At 11% alc/vol and properly dry, we think this is a perfect breakfast bubbly. We recommend you stock up a few for the summer months ahead when you should not be caught without this trick up your sleeve by the pool. We love it for its quirkiness and somehow even though it looks cloudy, the flavours are pure and simply delicious.
